Lucas Russo is our executive chef.
His relationship with gastronomy was in the bosom of his family “my dad and the improvised meals, my mom and her unique Spanish omelette; the nonno and the gnocchi; the nonna and the soup with toasted bread, which years later I discovered that they are called croutons; the grandmother and the sauces; the grandfather and his countless asados” says Lucas when talking about his beginnings.
He studied at the IAG and after visiting several gastronomic spaces, he joined the team of the Alvear Palace Hotel and then his steps led him to the LLao Llao Hotel where he stood out with his creativity. Back in Buenos Aires, in 2012 he was responsible for banquets at the Alvear Palace and in 2017 he joined the Hotel Alvear Icon in its opening.
In Barreto, Lucas found his place to cook with few processes, enjoying and respecting the raw materials. Lucas plays and re-interprets very good cuts of meats and accompanies them with seasonal vegetables grilled on the embers, in the clay oven and on the grill so that no one is left out and everyone enjoys his dishes.
“My main daily drive is my family, my wife and my 3 kids. For them I get up every morning and I put the best of me in everything I do” says Barreto’s chef, whose goal is that diners have a good time, with a high quality service, good wines and food made with love together with a large team of gastronomy professionals.
